Day 3 and it already feels like forever since I started. I’ve spent a lot of time in my kitchen, y’all.

Eggs! Whaa? This was supposed to be a 2-egg omelet with caramelized onions but fuck the onions. I wanted to have good old scrambled eggs. So that’s what I ate. It was delicious, but didn’t fill me up for long, unfortunately.

Lunch (which I ate at 11:45 because I couldn’t wait any longer) was leftover beet soup and leftover salmon atop miso-lime dressed butter lettuce with avocado. Not bad.

Dinner was a welcome change as I love asian flavors. The brown rice (I cheated a bit using a 90-second microwave kind) was stir fried with carrots, scallions, sesame oil and soy sauce.

This recipe called for tofu but that wasn’t going to fly in our house, so chicken played stand-in. Baby bok choy and mustard greens (because they were out of mezuna (?!?!) at Central Market) were stir fried with more soy sauce and sesame oil.

The finished product. My Food Bastard proclaimed this the best meal yet. Good thing it’s coming back again for lunch tomorrow.
